Description The Flavour profile of this sake is defined by its smooth mouthfeel, attributed to its smaller shinpaku. On the nose, the fresh aroma of steamed white rice followed by a sweet aftertaste of ripe pear. This leaves a refreshing, easy going, smooth finish on the palate. Made using Miyama Nishiki (34% Rice Milling Ratio) , a classic sakamai from Nagano Prefecture. This variety was born from a sudden mutation when another variety, Takane-nishiki, was exposed to radiation at an agricultural research station in Nagano (a technique called “radiation breeding”). Its production ranks third in Japan (as of 2021), following Yamada-nishiki and Gohyakumangoku, making it a major sakamai in the sake industry. Experience Narai by Suginomori, meticulously crafted in one of Japan's highest revived historic breweries, established in 1793 and nestled at 940m. Each batch is carefully overseen by Master Brewer Masayuki Irie. Our secret lies in the pristine mountain water, sourced from over 1,000m and originating near the convergence of the Shinano and Kiso Rivers.
